On Christmas I binged out on carbs...I stayed hungry the whole day...while I am on low carb I am not hungry all the time

Low carb meat balls and cheese sauce

1lb of ground beef 
2 eggs
2 tablespoon Italian seasoning
Salt & pepper to taste
1 cup Parmesan cheese.  
1 tablespoon coconut oil


Cheese sauce

1 C cheese 
1/4 heavy whipping cream

Mix all ingredients together in a bowl shaped into meatballs milk tablespoon coconut oil in a skillet place all meatballs and skillet and cook til brown

Cheese sauce 

In a small bowl place cheese and microwave for about 30 seconds and melt cheese take out of the microwave add heavy whipping cream stir and put back into the microwave for about 30 seconds pour over cooked meatballs

Do not pour cheese sauce over meatballs in skillet. 

Makes 10 meat balls

4 carbs for entire serving
.4 carb per meatball

Milestone almost there

Tried these jeans on 11/25 here we are 12/4 they are almost there....

Thanksgiving

No matter how you plan on eating right it's an epic fail when you are traveling. For thanks giving I drove to Nashville.  I arrived Wed and did pretty darn good. On Thursday I knew I would not stay on the plan. Friday I had every intention but failed.  I was so bummed because I wasn't able to eat right...

First low carb recipe... TORTILLAS!!

I wanted enchiladas but needed tortilla...
4.5 carbs or 1.5 net carbs 

They are more like crepes but taste good.
Coconut Flour Tortillas recipe photo








Preparation Time: 2 minutes
Mix the coconut flour and baking powder with the water (or milk) and egg whites. Whisk or blend until all lumps disappear (I usually mix, then wait a couple of minutes and mix again).
Pour all the batter on a heated pan greased with coconut oil or butter (grease well). Pour batter in center of pan. Tilt the pan around to spread the batter into a large circle, almost covering the entire bottom of the pan.
Be very careful with this part: wait until the edges are brown on the side of the tortilla, or carefully circle spatula around the bottom of tortilla until safe to flip. Once safe, flip the tortilla and cook for about 30 seconds on the other side.

Many many years ago I decided to try to do the Atkins diet but I couldn't do it because I was feeling so deprived but I decided to try it again  and this time it's not that hard. 

I have been doing Atkins for abt 3 days in this pic..  When u get down 10lbs I will take another pic
